Simply dose the portafilter with fresh ground espresso, place the portafilter on the bearing mounted rest in the PRESS, flip the switch and the piston will compress the grounds to whatever pressure you have set. [Including higher than the average 35 lbs that a person can repeatedly do.]  Polish the top of the puck by moving the portafilter handle side to side.
